Onomichi Ramen Kukai
Onomichi ramen is characteristic for the addition of pork back fat to a soy-sauce-based soup that contains extracts of small fish from the Seto Inland Sea. Even among the many ramen shops in Onomichi, Kukai is known for its popularity. It is very particular about using ingredients that "show the faces of the people who made them", and makes its ramen with only locally-procured, safe, and worry-free ingredients. The thin noodles are made with wheat from Hiroshima and the way the soup clings to them as you eat is spectacular. Diners can really enjoy the strong fragrance and springy texture of the wheat. Kukai's soup is made from exquisite proportions of a fish-based soup made from simmered small fish from the Seto Inland Sea, and a land-animal-based soup made with simmered pork bone, chicken bone, and vegetables.
