Izumo Soba
There is a famous shop that has been in business since 1950 and is where you can enjoy hand-made soba that uses unpolished buckwheat that was grown locally. Soba noodles made in Izumo use buckwheat that is ground with its husks giving it a darker color than soba noodles made from other buckwheats. It also has a higher nutritional value and stronger aroma. (*Restaurants may change their source of buckwheat depending on the weather and season.) In addition to soba noodles, some restaurants also serve rice bowls and sets. One of the most popular is katsu-don, which features an airy and juicy deep-fried pork cutlet that is unbelievably soft.
